We have a friend with more chafing dishes than most caterers. But mere mortals will invest in a few key basics and leave the rest to, well, the caterer. Be prepared to mix a few basics. Know how to use your shaker. Keep those table-side bottles chilled. Use a couple of trays, not so much for carrying around as for corralling your offerings and to use as pouring-and-prep surfaces.
